Young adult males have avargae vo2 max somewhere around 40 ml/min/kg where as elite athletes can be as high as 90 ml/min/kg. So if you are good runner you are more likely to have higher vo2 max and garmin just estimates how good of a runner you are and assign the vo2 max value based on some probability distribution.
